Menu planning Monday

This week, we’re preparing for a big holiday party for Dh’s work colleagues on Sunday. That means LOTS of cooking–we’re doing falafel, latkes, and a cookie bar (expect several cookie recipes and a party planner soon, see cookie menu below). I’m making huge batches and planning for some for dinner some of the nights. Although to my kids’ disappointment, the cookies are not the main course any night.

As always, we keep breakfast and lunch flexible depending on what we’re in the mood for with the ingredients I keep on hand.

Breakfasts: Yogurt, cereal, and eggs (and fruit)

Lunches: Sandwiches, soup, and quesadillas (and a veggie)

Sunday: (Clean Out your Refrigerator Night) CORN (Shabbat leftovers)

Monday: Potato latkes (plus a TON that will be frozen)

Tuesday: Sweet potato bar and Broccoli and Cheddar Quiche with a Brown Rice Crust

Wednesday: Falafel in pita, salads, and cookies

Thursday: (Pasta night) Pasta (creative, I know, but we’ll see where we are then)

Friday: Challah, salads (roasted eggplant, hummus, pepper salad, olive tapenade, and zhug), potato soup, and cookies.

Shabbat lunch: Challah, salads, orange herb chicken, rice pilaf, and jelly beans.

Sunday’s menu for 40-50: (dairy) Falafel with trimmings, latkes with trimmings, spiced apple cider, beer, and a cookie bar: white chocolate candy cane, cherry chocolate, pumpkin spice, eggnogg cookies, chocolate dipped strawberry cake balls, haystacks, and English toffee.
