White chocolate chunk cookies

These are good. I made them white chocolate candy cane cookies with chopped peppermint hershey’s kisses for our upcoming work holiday party, but they would be good with so many other things. Think almonds, dried cherries or cranberries, maybe oreo cookie chunks. This can be parve or dairy, and makes about 2.5-3 dozen, depending on the size of the cookie. I quadrupled this recipe successfully.

  • 1 stick butter or margarine
  • 3/4 C brown sugar
  • 1 C white chocolate, melted (chips or a bar)
  • 1 t vanilla (you can change this up–I added a little mint extract in addition to the vanilla)
  • 1 egg
  • 1/2 t salt
  • 3/4 t baking soda
  • 2 C flour
  • 1 C chunks (nuts, dried fruit, candy, whatever sounds good to you!)

Cream butter and sugar while you’re melting the chocolate. Add in egg, extract(s), and then chocolate, beating well after each. Add in dry ingredients and mix. Last, add your chunks.

Form into balls about the size of walnuts and put on an ungreased baking sheet to bake in a 350F oven for 7-8 minutes until just beginning to be light brown around the edges. Let cool a few minutes on the sheet, then remove to a rack to finish cooling.

Voila!
