Taco Slice

This is something we’ve been eating a lot of lately. It’s a good change from a regular pizza, and something that I LOVE. I saw it on the menu of a pizza shop years ago, and went home and made my own. Lettuce and beans on a pizza sounds weird at first, but it’s great!

TACO PIZZA

  • pizza crust (your favorite recipe, precooked shell, or even a tortilla, if you like thin)
  • refried beans (I just cook pinto beans, puree, and add a little garlic powder)
  • cheese
  • toppings: shredded lettuce, taco sauce or salsa, crushed nacho chips, tomatoes, sour cream, avocado chunks, more shredded cheese…

Start by preheating your oven to about 450F. You want it hot!

Spread your crust with beans as you would pizza sauce. It shouldn’t be too thick. Sprinkle with cheese (see the photo of my unbaked lunch above–it’s on a tortilla today), and bake until the cheese is bubbly.

Pull out of the oven and cut, then top as desired (cut first, or you’ll have a hard time cutting through all of those toppings). I usually do taco sauce first, followed by lettuce, nacho chips pieces, and avocado. Eat or serve right away – the toppings get soggy if it sits.

It’s pretty easy, a little different, and really delicious!
