Menu plan for the week (9 days)

Since we’re strictly vegetarian this week until Shabbat, it is a little different from normal weeks. You may have seen my post on vegetarian ideas for this week (if not, go and check it out!). I’ve written up my menu for the week. There is at least one fruit and/or veggie at every meal, but I don’t have those included. We also are having homemade granola, yogurt, and cereal for breakfasts, but I didn’t write them all in.

Here’s what I’m planning this week:

Sunday

  • Lunch: Macaroni and cheese
  • Dinner: Grilled cheese and pizza soup

Monday:

  • Lunch: bagels with cream cheese and veggies, salad
  • Dinner: Waffles with fruit and scrambled eggs

Tuesday:

Wednesday:

  • Lunch: sandwiches
  • Dinner: Black bean burgers with toppings (cheese, avocado, veggies, hot sauce)

Thursday:

  • Lunch: buttered noodles (leftovers, too) and cheesy garlic bread, salad
  • Dinner: spinach quiche with a brown rice crust (about 2 C rice, an egg, and some cheese pressed into a pie plate, baked until a little browned)

Friday:

  • Lunch: Sandwiches
  • Dinner: Shabbat! Meat, of course, but that will be in a different post…

      Yay! To be honest, we normally eat mostly vegetarian on weekdays anyway, so this isn’t so different. But I still like to dust off the old favorites this week (that would be dusting off the recipes, not the food, by the way. 🙂 )
