By now, the mercury is rising and summer is in full swing. No one wants to heat up the kitchen, but everyone has to eat, right?

Now is the time to make creative use of the appliances other than your oven. Your rice cooker can make perfect rice, your wok can stir fry, a deep fryer can fry, your microwave can cook many things, your grill can make several meals worth of proteins at a time, and your stovetop can make things for later use.

Now is also the time for fresh fruits and veggies – the bounty of the season! Salads and cold veggie soups like gazpacho are perfect to eat now.

So what are some ideas for summer meals?

  • cold noodle salads: sesame noodles, mayo-based pasta salads, vinaigrette pasta salads, pesto pasta
  • grains like quinoa
  • bean based meals: burritos, enchiladas, chili
  • veggie based salads: “Israeli” salad made with cucumber and tomato, spinach and feta, eggplant and tomato, corn, cucumber
  • hard boiled eggs, egg salad, deviled eggs
  • grilled or sauteed veggies: eggplant, corn on the cob, zucchini
  • grilled meats: chicken, burgers, steaks,  hot dogs, bratwursts
  • baked potato bar (microwaved!) with cheese, sour cream, veggies, etc.
  • bread and spreads: hummus, babaganoush, carrot, tomato, white bean dip, whatever you like!
  • soups: gazpacho, noodle soup, fruit soup
  • fresh fruit: kabobs, melon slices, berries, frozen bananas
