Menu planning Monday

This week, we have a birthday! That means birthday pizza, but the rest of the week is fairly uneventful. I have a lot of ground beef I want to start using in my freezer, so you’ll see that a few times. I also got a really great deal on sweet potatoes.

As always, we keep breakfast and lunch flexible depending on what we’re in the mood for with the ingredients I keep on hand.

Breakfasts: Yogurt, cereal, and eggs (and fruit)

Lunches: Sandwiches, pizza bagels, and quesadillas (and a veggie)

Sunday: Chicken nuggets, veggie sticks, and dipping sauces

Monday: (Clean Out your Refrigerator Night) leftovers: kugels, chili, salads.

Tuesday: (Slowcooker) shephard’s pie with sweet potato topping (I’ll post if it’s any good)

Wednesday: Out (for a birthday!)

Thursday: (Pasta night) broccoli potato pirogi

Friday: Challah, salads (roasted eggplant, hummus, pepper salad, olive tapenade, and zhug), minestrone, Moroccan cigars, wedding cake (in honor of Yitchak and Rivkah’s wedding in this week’s parsha).

Shabbat lunch: Challah, salads, roasted sweet potato, bbq beef sandwiches, cake

What are your menu plans for the week? If you blog about it, please put a link to your menu plan in the comments below.
